Ingredients
- 1 onion
- 2 scallions
- 3/4 lb thin-sliced beef
- 1 Tbsp neutral-flavored oil
- 3 large eggs
- Japanese rice
- pickled red ginger
- 1 Tbsp sugar
For the sauce:
- 2 Tbsp sake
- 2 Tbsp mirin
- 3 Tbsp soy sauce
Instructions
- Slice the onion thinly.
- Slice the scallion and set aside for garnish.
- If needed, cut beef into 3″ strips.
- Heat the oil over medium heat and cook the onions until tender, around 3-5min.
- Add the meat and sprinkle the sugar over the meat. Cook until no longer pink.
- Add the remaining sauce ingredients, reduce heat, and simmer for 5min.
- Beat the eggs and drizzle over beef and onion.
- Cover and cook until egg is almost done.
- Serve over rice with scallions and ginger.
Notes: For the beef, I find shaved steak (for Philly cheese steaks) works well. I usually double the sauce ingredients. I also like to garnish with toasted sesame seeds.
