Ingredients
For crust:
- 2+1/2 cups honey nut cheerios
- 3 Tbsp sugar
- 1/3 cup melted butter
- pinch of kosher salt
For filling:
- 2 eggs
- 1/2 cup packed brown sugar
- 1 15oz can pumpkin
- 1 12oz can evaporated milk
- 1 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1 tsp vanilla extract
- 1/2 tsp kosher salt
- powdered sugar for dusting
Instructions
- Preheat oven to 350 degrees F. Grease 9×9 pan.
- Crush the cereal into fine crumbs (via rolling pin or food processor).
- Combine crumbs, butter, sugar, and salt and press mixture into bottom of greased pan.
- Bake until golden, around 7-8 minutes.
- Adjust oven to 425 degrees F.
- Beat all filling ingredients together with mixer until smooth.
- Pour filling over crust.
- Bake for 15min, reduce temperature to 350 degrees F, and bake for 35min or until a toothpick comes out clean.
- Let cool and then refrigerate until chilled.
- Before serving, dust with powdered sugar.
