Pumpkin Dream Bars

Ingredients

For crust:

  • 2+1/2 cups honey nut cheerios
  • 3 Tbsp sugar
  • 1/3 cup melted butter
  • pinch of kosher salt

 

For filling:

  • 2 eggs
  • 1/2 cup packed brown sugar
  • 1 15oz can pumpkin
  • 1 12oz can evaporated milk
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1 tsp vanilla extract
  • 1/2 tsp kosher salt
  • powdered sugar for dusting

Instructions

  1. Preheat oven to 350 degrees F. Grease 9×9 pan.
  2. Crush the cereal into fine crumbs (via rolling pin or food processor).
  3. Combine crumbs, butter, sugar, and salt and press mixture into bottom of greased pan.
  4. Bake until golden, around 7-8 minutes.
  5. Adjust oven to 425 degrees F.
  6. Beat all filling ingredients together with mixer until smooth.
  7. Pour filling over crust.
  8. Bake for 15min, reduce temperature to 350 degrees F, and bake for 35min or until a toothpick comes out clean.
  9. Let cool and then refrigerate until chilled.
  10. Before serving, dust with powdered sugar.
