Sesame Brittle

Ingredients

  • 3/4 cup sugar
  • 1/4 cup honey
  • Pinch of salt
  • 1/4 tsp of ground nutmeg
  • 1 Tbsp water

 

  • 1 cup raw sesame seeds
  • 1 tsp of vanilla extract
  • 2 tsp butter
  • 1/4 tsp of baking soda

Instructions

  1. Heat the sugar, honey, salt, nutmeg, and water in a small (1 1/2 quart), thick-bottomed saucepan on medium heat. Stir until a smooth slurry is formed.
  2. Stir in the sesame seeds.
  3. Cook the mixture until it turns to an amber caramel color (5-10min or 300 degrees F).
  4. Remove pan from heat and stir in vanilla and butter.
  5. Once the butter is completely melted, stir in the baking soda.
  6. Pour the mixture out onto a silpat-lined baking sheet or directly onto a well-buttered baking sheet.
  7. Once cooled and hardened (20min-ish), break into pieces.
