Spinach & Artichoke White Bean Soup

Ingredients

  • 1.5 lbs dry white beans
  • 2 large yellow onions, diced
  • 2x 14.5 oz cans quartered artichokes, drained and roughly chopped
  • 9 cups chicken stock

 

  • 2 Tbsp olive oil
  • 2 Tbsp minced garlic
  • 1 Tbsp salt
  • 2 tsp Italian seasoning
  • 6 oz heavy cream
  • 5 oz baby spinach
  • juice of 2 lemons

Instructions

  1. In a large slow cooker, mix the first 8 ingredients.
  2. Cook on low for 8 hours or on high for 4-6 hours, or until beans are cooked.
  3. To finish, stir in cream, spinach, and lemon juice.
