Ingredients

1.5 lbs dry white beans

2 large yellow onions, diced

2x 14.5 oz cans quartered artichokes, drained and roughly chopped

9 cups chicken stock
- 2 Tbsp olive oil

2 Tbsp minced garlic

1 Tbsp salt
-
2 tsp Italian seasoning
-
6 oz heavy cream
-
5 oz baby spinach
-
juice of 2 lemons
Instructions
- In a large slow cooker, mix the first 8 ingredients.
- Cook on low for 8 hours or on high for 4-6 hours, or until beans are cooked.
- To finish, stir in cream, spinach, and lemon juice.
