Spicy Peanut Cucumber Salad

Ingredients

  • 2 medium cucumbers – about 1 pound
  • 3 tablespoons creamy peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 teaspoons maple syrup

 

  • 2 cloves garlic – minced or pressed
  • 1/4 cup peanuts
  • 1/4 cup cilantro – chopped
  • 2 teaspoons red chili flakes – or red pepper flakes

Instructions

  1. Cut the cucumbers in half lengthwise.
  2. Scoop out the seeds.
  3. Slice the cucumbers into half moons and add to large bowl.
  4. In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, and maple syrup.
  5. In a food processor, add the garlic, peanuts, cilantro, and red pepper flakes and pulse until finely chopped.
  6. Add the peanut butter mixture and half the peanut/cilantro mixture to the cucumbers and mix well.
  7. Pour into a serving bowl and top with the remaining peanut/cilantro mixture.

Notes: Reduce red pepper flakes if too spicy.
