Ingredients
- 2 medium cucumbers – about 1 pound
- 3 tablespoons creamy peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 teaspoons maple syrup
- 2 cloves garlic – minced or pressed
- 1/4 cup peanuts
- 1/4 cup cilantro – chopped
- 2 teaspoons red chili flakes – or red pepper flakes
Instructions
- Cut the cucumbers in half lengthwise.
- Scoop out the seeds.
- Slice the cucumbers into half moons and add to large bowl.
- In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, and maple syrup.
- In a food processor, add the garlic, peanuts, cilantro, and red pepper flakes and pulse until finely chopped.
- Add the peanut butter mixture and half the peanut/cilantro mixture to the cucumbers and mix well.
- Pour into a serving bowl and top with the remaining peanut/cilantro mixture.
Notes: Reduce red pepper flakes if too spicy.
