Ingredients
- 3/4 cup sugar
- 1/4 cup honey
- Pinch of salt
- 1/4 tsp of ground nutmeg
- 1 Tbsp water
- 1 cup raw sesame seeds
- 1 tsp of vanilla extract
- 2 tsp butter
- 1/4 tsp of baking soda
Instructions
- Heat the sugar, honey, salt, nutmeg, and water in a small (1 1/2 quart), thick-bottomed saucepan on medium heat. Stir until a smooth slurry is formed.
- Stir in the sesame seeds.
- Cook the mixture until it turns to an amber caramel color (5-10min or 300 degrees F).
- Remove pan from heat and stir in vanilla and butter.
- Once the butter is completely melted, stir in the baking soda.
- Pour the mixture out onto a silpat-lined baking sheet or directly onto a well-buttered baking sheet.
- Once cooled and hardened (20min-ish), break into pieces.
